10 tbsp orange juice
3 tbsp Peanut Butter, reduced sodium
3 tbsp low sodium soy sauce
1 tbsp packed light brown sugar
1 1/2 tsp ground ginger
2 tsp minced garlic , crushed
1 1/4 lb boneless skinless chicken breasts
48 Onion, scallions, tops & bulb, fresh, medium, 4 1/8" long , cut into 1 in pieces
2 medium red bell peppers , cut into 48 pcs 1/2X1 inch
1 cooking spray
Rinse the chicken in cool water and pat it with paper towels to dry.
Cut the chicken into thin, 1/4 inch strips and place in a shallow, nonmetal container.
To make marinade, process orange juice, peanut butter, soy sauce, brown sugar, ginger, and garlic together in a blender until smooth.
Pour 1/3 cup of the marinade in a covered container and refrigerate.
Pour the remaining marinade over the chicken strips. Toss to mix.
Cover and refrigerate for 6-24 hours.
Weave a 6-inch strip of the chicken, 2 scallion pieces, and 2 bell pepper pieces onto each wooden skewer.
Spray a large broiler pan with nonstick cooking spray and place the skewers on the pan.
Broil, turning occasionally, for approximately 8 minutes until the chicken is browned.
Baste with the refrigerated marinade for the last 3 minutes of cooking.
If grilling, grill over medium heat for 8 minutes, turning occasionally.
