Peanut Butter Chicken Kabobs

  • 10 tbsp orange juice

  • 3 tbsp Peanut Butter, reduced sodium

  • 3 tbsp low sodium soy sauce

  • 1 tbsp packed light brown sugar

  • 1 1/2 tsp ground ginger

  • 2 tsp minced garlic , crushed

  • 1 1/4 lb boneless skinless chicken breasts

  • 48 Onion, scallions, tops & bulb, fresh, medium, 4 1/8" long , cut into 1 in pieces

  • 2 medium red bell peppers , cut into 48 pcs 1/2X1 inch

  • 1 cooking spray

  1. Rinse the chicken in cool water and pat it with paper towels to dry.

  2. Cut the chicken into thin, 1/4 inch strips and place in a shallow, nonmetal container.

  3. To make marinade, process orange juice, peanut butter, soy sauce, brown sugar, ginger, and garlic together in a blender until smooth.

  4. Pour 1/3 cup of the marinade in a covered container and refrigerate.

  5. Pour the remaining marinade over the chicken strips. Toss to mix.

  6. Cover and refrigerate for 6-24 hours.

  7. Weave a 6-inch strip of the chicken, 2 scallion pieces, and 2 bell pepper pieces onto each wooden skewer.

  8. Spray a large broiler pan with nonstick cooking spray and place the skewers on the pan.

  9. Broil, turning occasionally, for approximately 8 minutes until the chicken is browned.

  10. Baste with the refrigerated marinade for the last 3 minutes of cooking.

  11. If grilling, grill over medium heat for 8 minutes, turning occasionally.

  12. Serve hot.
