Grilled Chicken Salad

This delicious take on a classic salad features delightfully seasoned chicken and a bevy of healthy, delicious vegetables — yet it’s low in carbs and calories. Makes enough to share or save for later!

Grilled Chicken Salad
Ingredients
  • 1–2 lbs boneless, skinless chicken breast

  • Season salt

  • Worcestershire Sauce

  • Romain lettuce

  • Spinach

  • Carrots

  • Cucumbers

  • Green onion

  • Tomatoes

  • Avocado

Directions
  1. Grill chicken over medium flame, brushing with Worcestershire and sprinkling lightly with season salt. When cooked thoroughly, cut into strips and set aside.

  2. Cut lettuce, spinach, carrots, cucumbers, tomatoes, onion, and avocados. Toss everything together. Top with strips of grilled chicken and drizzle with your favorite low-fat dressing.

I prefer a dash of regular salt but when I am trying to reduce my salt our favorite seasoning is McCormick Perfect Pinch Original All Purpose Salt Free Seasoning. I use that on quite a few things in my house. I think this salad would be excellent for me. For my husband who doesn't like tomatoes or avocados I would have to add a few other vegetables along with some iceberg lettuce for him. Since he is a borderline diabetic I am really trying to get him to eat better as I have been all along but I have to some times sneak the better things for him in on him.

That's a great suggestion. I guess old habits die hard. My dad was one of those who reached for the salt before he'd even touched his food. I don't do that, but I do still love to use my Lawry's :-)
