Peppered Cauliflower

  • 1 tbsp vegetable oil

  • 1 cup fresh chopped onion

  • 2 medium garlic cloves , minced

  • 1 cup chopped tomato

  • 1/4 tsp salt

  • 1/4 tsp black pepper , or more, to taste

  • 1/4 tsp ground red pepper (cayenne)

  • 16 oz fresh cauliflower florets

  1. Pour oil in a frying pan and heat over medium-high heat.

  2. Cook onions and garlic in oil for 5 minutes or until golden.

  3. Mix in tomato, salt, and black and red pepper and cook 2 minutes.

  4. Stir in cauliflower, cover, lower heat, and simmer 12 minutes or until soft.
