Pizzettas Greek-style Appetizers

  • 4 whole wheat tortillas (7 - 8 in)

  • 3 1/2 oz hummus (about 1/3 cup)

  • 1/2 g roasted red peppers with brine , drained and chopped

  • 1/2 cup Cheese, feta, crumbled (2 ounces)

  • 1/2 cup Cheese, mozzarella, shredded (2 ounces)

  • 8 pitted calamata olives , halved

  • 1 tsp fresh oregano , snipped

  1. Preheat oven to 425 degree F.

  2. Arrange tortillas in a single layer on an extra-large baking sheet.

  3. Bake in oven for 3 to 4 minutes or until crisp.

  4. Spread hummus over tortillas.

  5. Top with roasted red peppers, feta cheese, and mozzarella cheese.

  6. Bake about 6 minutes more or until cheese is melted and edges are lightly browned.

  7. Sprinkle with olives and oregano.

  8. Cut each pizzetta into quarters.

I've got everything to make this one and tomorrow is the day. After all, it is Super Bowl Sunday and this will be an extra added snack for the table.
