Pineapple Salad

  • 2 cup Cottage Cheese, fat free

  • 2 cup Pineapple, crushed, canned, with juice, drained

  • 1 Gelatin, lemon, sugar free, dry mix, serving

  • 1 cup whipped fat-free topping

  • 1/4 cup chopped pecans

  1. Put both the cottage cheese and pineapple in a large bowl.

  2. Stir in the dry gelatin and fold in the Cool Whip Free and pecans.

  3. Cover, refrigerate for at least 15 minutes, stir once more, and serve.

I use this recipe quite a bit but I change the flavor of jello to whatever fruit I use. I have used mandarin oranges, fruit cocktail, cherries, peachies, pears and I never get tired of jello!
