Replace potato hash browns with this cauliflower alternative to make a tasty breakfast side that only has 13 grams of carbs.

Low Carb Cauliflower Hash Browns
Ingredients
  • 12 ounces grated fresh cauliflower (about 1/2 medium head)

  • 4 slices bacon (chopped.)

  • 3 ounces chopped onions (about 1/2 cup)

  • 1 tablespoon butter (melted or softened.)

  • salt and pepper

Directions
  1. In a large skillet, cook the bacon and onion until they just start to brown.

  2. Add the cauliflower; cook and stir until the cauliflower is tender and browned all over.

  3. Add butter occasionally through the cooking process to assist with browning.

  4. Season to taste with salt and pepper.

Not sure I would call this healthy with 26.4g of fat not to mention 471mg of sodium, but I guess the bacon is going to give it flavor. The carbs are higher than I would have thought it would be also.

I am on a low carb diet. I have gotten off 2 types of insulin and I am riding a stationary bike up to 1 hour and18 mins. I am losing weight slowly as I have an under- active thyroid. BUT I am losing. Over 100 lbs and I am determined to lose more.
