Low Carb Key Lime Pie

Low Carb Key Lime Pie
  • 2 (8 ounce) packages cream cheese

  • 1 (3 ounce) box sugar-free lime gelatin

  • 1 teaspoon lime juice

  • 1 tablespoon lime zest

  • 6 packets of splenda artificial sweetener

  • 1/2 cup boiling water

  • 1/2 cup very cold water

  1. Soften cream cheese in mixing bowl (you can nuke it on medium in the microwave for about 2 minutes), Blend in lime juice and Splenda.

  2. In a separate bowl, stir the boiling water into the Jello until it is completely dissolved.

  3. SLOWLY blend Jello mixture with the cream cheese mixture until blended.

  4. Add the cold water and the lime zest immediately and mix thoroughly.

  5. Pour into pie pan and refrigerate at least one hour.

  6. Cut into eight slices and serve with a dollop of Reddi Whip.

God bless Doctor Arthur moon for helping me cure my diabetes type 2. Brethren, i have suffered diabetes for a long period of time, i have tried so many remedy, but known seems to work. Is it really necessary to add all that artificial sweetener when the Jello is sweet enough? Why such a sliver of pie when we really want to eat the whole pie! If portion is key this is just a tease. Consuming artificial sweeteners just makes us crave that sweetness. Why not just use less sugar or none at all. Key Lime Pie is my favorite.

I just made this dessert for my type 1 12 year old daughter. She can't wait to try it out as part of her up to 15 g of carbs on her next snack :-) - very easy to make.
