Refreshing Cucumber Salad

  • 1/4 cup reduced fat mayonnaise

  • 1/4 cup fat free sour cream

  • 1 Tbsp. sugar

  • 1 Tbsp. vinegar

  • 1 tsp. dill weed

  • salt and pepper to taste

  • 2 6 oz. cucumbers, thinly sliced (to make 3 cups)

  • 1 cup grape tomatoes, halved

  • 2 to 4 small green onions, sliced into rings, amount according to you preference

  1. In a medium sized mixing bowl, mix mayonnaise, sour cream, sugar, vinegar, dill, salt and pepper. Blend thoroughly.

  2. Add cucumbers, tomatoes, and green onions to creamy mixture and stir together.

  3. Allow to marinate in refrigerator for at least 1 hour before serving.

I lovve this one. I could eat this everyday. Except, I use sweet vadelia onions.
