Green Bean Salad

Ingredients
  • Prep Time: 20 minutes

  • Cooking Time: 10 minutes

  • Chilling Time: 2 hours

  • 4 cups water

  • 1 Tbsp. salt

  • 2 lbs fresh green beans, cut into 2" pieces

  • 1 rib celery, chopped fine

  • 1/2 cup chopped green onions

  • 2 cups cherry tomatoes, halved

  • 1/2 cup reduced fat feta cheese

  • Dressing:

  • 6 Tbsp. oil

  • 2 Tbsp. rice vinegar

  • 1 tsp Dijon mustard

  • salt to taste pepper to taste

Directions
  1. Bring water and salt to a boil in a large stockpot. Place beans into boiling water and cook for 6 minutes. Remove from stove and drain. Plunge beans immediately into ice water. Drain.

  2. In a large mixing bowl combine beans, celery, onions, tomatoes, and cheese.

  3. In a jar with a tight fitting lid, combine oil, vinegar, mustard, salt and pepper. Shake well.

  4. Pour dressing over bean mixture. Toss.

  5. Chill for at least 2 hours before serving.
