Oven-Baked Parmesan Zucchini

Ingredients
  • 4 small zucchini , scrubbed and diagonally sliced about 1/2 inch thick

  • 2 eggs , beaten

  • 2 tbsp Flour, white, unbleached, enriched

  • 3 tbsp grated parmesan cheese

  • 1 tsp ground oregano

  • 1/2 tsp dried basil

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1 tbsp olive oil

Directions
  1. Preheat oven to 350 degrees F.

  2. Coat zucchini slices with egg.

  3. Add flour, cheese, basil, paprika, and garlic powder to a large resealable plastic bag.

  4. Place zucchini pieces in plastic bag and coat evenly.

  5. Arrange zucchini slices on a nonstick baking sheet and lightly pour oil over.

  6. Place baking sheet in oven and bake until zucchini is lightly browned, about 7 or 8 minutes.

We have a garden and sometimes the zucchini has taken it over…you learn real quick to learn new ways to cook it. I have made pies; cake; bread; and even cookies with zucchini…I haven't found a way it has turned out bad yet.
