1 tbsp vegetable oil
1 medium zucchini , cut into 1/4 in slices
8 oz green bell pepper strips (1 cup)
1/2 cup Potatoes, fresh, with skin, diced
1/2 cup fresh chopped onion , coarsely chopped
1 large tomato , cut into wedges
1/4 tsp garlic powder
1/2 tsp salt
1 bay leaves
Pour oil into a heavy saucepan and bring to a frying temperature.
Add vegetables and seasonings to hot oil and cook over moderate heat for about 3 minutes, stirring occasionally.
Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
Remove bay leaf and serve hot.
Don't forget to remove the bay leaf before serving.
