Zucchini and Peppers

  • 1 tbsp vegetable oil

  • 1 medium zucchini , cut into 1/4 in slices

  • 8 oz green bell pepper strips (1 cup)

  • 1/2 cup Potatoes, fresh, with skin, diced

  • 1/2 cup fresh chopped onion , coarsely chopped

  • 1 large tomato , cut into wedges

  • 1/4 tsp garlic powder

  • 1/2 tsp salt

  • 1 bay leaves

  1. Pour oil into a heavy saucepan and bring to a frying temperature.

  2. Add vegetables and seasonings to hot oil and cook over moderate heat for about 3 minutes, stirring occasionally.

  3. Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.

  4. Remove bay leaf and serve hot.

  5. Additional Information

  6. Don't forget to remove the bay leaf before serving.
