Grilled Zucchini

Tired of eating the same old vegetables? This recipe uses the same old vegetables, but gives it a new great flavor.

Grilled Zucchini
  • 1 medium zucchini

  • 2 tbsp olive oil

  • 1 tsp oregano leaves

  • 1 pinch black pepper and salt (to taste)

  • 2 tbsp fresh lime juice

  1. Slice zucchini in half lengthwise; rub with olive oil, sprinkle with oregano and pepper.

  2. Grill directly over medium hot coals, cut side down, until well browned. Sprinkle with lime juice and season with salt.
