Baked Artichokes with Parmesan cheese

  • 18 oz Artichokes, hearts, frozen (2 9oz packages)

  • 1 tbsp fresh lemon juice

  • 3 tbsp chopped pecans , ground

  • 2 tbsp grated parmesan cheese

  • 1 tsp dry italian seasoning , crushed

  • 1 medium garlic cloves , minced

  • 1 tsp extra virgin olive oil

  1. Preheat the oven to 375 F. Coat a 9" glass pie plate with cooking spray.

  2. Place the artichokes in a colander and rinse well with cold water to separate. Drain well, then pat dry with paper towels. Place in the prepared pie plate and sprinkle with lemon juice.

  3. Combine the pecans, cheese, Italian seasoning, garlic, and oil in a small bowl. Sprinkle the mixture evenly over the artichokes

  4. Bake for 15 minutes or until topping is golden in color.

  5. Additional Information

  6. Serve with whole wheat crackers or bread sticks.
