Greek Cabbage Salad

Ingredients
  • 6 to 8 cups thinly sliced cabbage

  • 1/2 cup sliced black olives

  • 1/2 cup thinly sliced red onions

  • 1/2 cup reduced fat feta cheese, diced or crumbled

  • Dressing:

  • 1 cup apple cider vinegar

  • 6 Tbsp. oil

  • 1 tsp. dry mustard

  • 1/2 tsp. celery seed

Directions
  1. Combine first 4 salad ingredients in a large bowl.

  2. Combine dressing ingredients in a blender or food processor or beat well with a whisk.

  3. Add salad dressing to cabbage mixture. Chill in refrigerator at least 1 hour before serving to combine flavors.
