Cabbage Slaw with Vinegar Dressing

This picnic classic can be made diabetic friendly with just a few variations.

Ingredients
  • Prep Time: 30 to 45 minutes

  • Chilling Time 3 to 4 hours

  • 8 cups grated cabbage

  • 1/4 cup grated carrots

  • 1/4 cup diced celery

  • 1/4 cup chopped red pepper

  • 1/4 cup chopped yellow pepper

  • 1/8 cup chopped green pepper

  • 1 Tbsp. celery seed

  • 3/4 to 1 cup sugar substitute

  • 1 tsp. salt

  • 1/2 cup white vinegar

  • 1/4 cup plus 2 Tbsp., oil

Directions
  1. Combine vegetables, celery seed, sugar, and salt in a large mixing bowl. Mix well.

  2. In a small saucepan, bring vinegar to a boil. Add oil. Pour over vegetables. Mix well.

  3. Refrigerate for 3 to 4 hours before serving.
