Cheese-stuffed Tomatoes

  • 15 cherry tomatoes

  • 1/2 cup 2% cottage cheese

  • 1 tablespoon thinly sliced green onion

  • 1/2 teaspoon minced fresh dill weed, or

  • 1/8 teaspoon dried dill weed

  • 1/8 teaspoon lemon pepper

  1. Cut a thin slice off the botton of each tomato. Scoop out the pulp with a small melon baller discarding the pulp. Invert the tomatoes on a wire rack to drain.

  2. Combine the cottage cheese, green onion, dill weed and lemon pepper in a bowl and mix well. Spoon the cottage cheese mixture into the tomatoes. Serve immediately or store, covered, in the fridge for up to 8 hours.
