Cheesy Cauliflower

1 head of cauliflower

1 Tbsp. water

1 cup mayonnaise

1/2 cup chopped green or red onions

1/4 cup reduced fat Monterey Jack cheese, shredded

1/4 cup reduced fat sharp cheddar cheese, shredded
Place whole cauliflower head in microwavable glass baking dishy. Add water. Cover Microwave on high for 9 minutes, until crisp cooked.
Meanwhile, combine mayonnaise, mustard and onions in a small bowl. Spread over cooked cauliflower. Sprinkle with cheese.
Cover and microwave on high for 1 minute, or until cheese is melted.
Variation: You may break the cauliflower into florets and proceed with Step 1.

Grate a little nutmeg on top & it's perfect.
it says mustard in the instructions but not in the ingredients…
and the carbs are listed as 1 AND as 11.
the carbs could be right. mayonnaise (which is really just egg and soy oil whipped together with a bit of vinegar, you can make your own), should be very low carb-even one cup of the stuff. cheese should have 0 carbs. I've made a similar recipe to this and love it—very yum and yum. I used mixed vegetables, 2 cups, green beens, 2 cups, 1 cup of mayonnaise AND 1 cup of sour cream and 1 small onion chopped. mix together and microwave. my family thinks it's a bit rich. i say yum.
Says that it serves 1. If that's the case the carbs are very wrong. Mayonnaise has 1 carb per tablespoon and there are 16 tablespoons in the cup called for. This doesn't include the cheese, etc. Could servings be wrong?
How much and what kind of mustard?
