1 head of cauliflower
1 Tbsp. water
1 cup mayonnaise
1/2 cup chopped green or red onions
1/4 cup reduced fat Monterey Jack cheese, shredded
1/4 cup reduced fat sharp cheddar cheese, shredded
Place whole cauliflower head in microwavable glass baking dishy. Add water. Cover Microwave on high for 9 minutes, until crisp cooked.
Meanwhile, combine mayonnaise, mustard and onions in a small bowl. Spread over cooked cauliflower. Sprinkle with cheese.
Cover and microwave on high for 1 minute, or until cheese is melted.
Variation: You may break the cauliflower into florets and proceed with Step 1.
