Stir Fried Broccoli

Ingredients
  • 1 onion, diced

  • 1 Tbsp. oil

  • 1 lb. broccoli florets, cut in pieces, fresh or frozen

  • 1/2 cup reduced sodium, 98% fat free chicken broth

  • 1 tsp. cornstarch

  • 2 Tbsp. light soy sauce

  • 1 tsp. sugar

Directions
  1. Brown onion in oil in a large skillet. Add broccoli. Stir fry 3 minutes.

  2. In a small bowl, combine chicken broth, cornstarch, soy sauce, and sugar. Add to broccoli. Cook 1 to 2 minutes until sauce clears.

  3. Serve over cooked rice.

  4. Variations:

  5. 1) Replace half of broccoli with cauliflower or any other vegetable of you choice.

  6. 2) Add strips of boneless skinless chicken breasts to Step 1.
