1 onion, diced
1 Tbsp. oil
1 lb. broccoli florets, cut in pieces, fresh or frozen
1/2 cup reduced sodium, 98% fat free chicken broth
1 tsp. cornstarch
2 Tbsp. light soy sauce
1 tsp. sugar
Brown onion in oil in a large skillet. Add broccoli. Stir fry 3 minutes.
In a small bowl, combine chicken broth, cornstarch, soy sauce, and sugar. Add to broccoli. Cook 1 to 2 minutes until sauce clears.
Serve over cooked rice.
1) Replace half of broccoli with cauliflower or any other vegetable of you choice.
2) Add strips of boneless skinless chicken breasts to Step 1.
