Zucchini Hamburger Bake

  • Cooking Time: 45 to 55 minutes

  • 1 90% lean hamburger

  • 1 small onion, chopped

  • 1/4 tsp. pepper

  • 2 cups pizza sauce

  • 1/2 cup raw long grain rice

  • 4 cups zucchini, peeled and cubed

  • 1 1/2 cups water

  • 3/4 cup fat free mozzarella cheese, grated

  1. In a large skillet or stockpot, brown hamburger and onion together. Drain off drippings. Season meat and onion with pepper.

  2. Add remaining ingredients, except chees, and stir together. Cover and simmer over low heat until rice is soft, approximately 35 to 45 minutes.

  3. Top with cheese and allow to melt before serving.

  5. An electric skillet works well for making this casserole.

  6. You can double the amount of zucchini if you want.

always looking for different ways to fix zucchini. this is a great one. if the kids wont eat zucchini shredd into this recipe. i LOVE zucchini

This is a great main dish recipe. It is even "kid" friendly. With the pizza sauce, hamberger, and the cheese, they won't even notice the green stuff. lol The carb count is pretty good for a main dish.
