Hamburger Potato Carrot Bake

Ingredients
  • 1 lb. 90% lean ground beef

  • 1/2 tsp. onion powder, or 1 Tbsp. dried onion soup mix

  • 1/4 tsp. salt, divided

  • 1/8 tsp pepper

  • 1/2 cup ketchup

  • 4 medium sized potatoes, peeled and sliced

  • 4 carrots, peeled and sliced

  • 2 Tbsp. water

  • 2 1/2 oz reduced fat Velveeta Cheese slices

Directions
  1. 1) Press uncooked ground beef into the bottom of a lightly greased 9" square pan. Sprinkle with onion powder, 1/8 teaspoon salt, and 1/8 teaspoon pepper.

  2. 2) Spread ketchup over top.

  3. 3) Arrange sliced potatoes on top of the ground beef layer. Sprinkle remaining salt.

  4. 4) Arrange carrots on top of potato layer. Sprinkle with water.

  5. 5) Cover tightly with foil and bake at 350 degrees for 1-1 1/2 hours, or until vegetables jag tender.

  6. 6) Remove from oven. Top with cheese slices. Cover and let stand 5-10 minutes until cheese has melted.

This was a hit. Hubby went back for seconds. We cut he cooking time by popping it in the microwave for 5-7 minutes before baking it. That way we could save a little time.

This really doesn't have as many carbs as I thought it would. What I like most is that it is a one dish meal and that it is easy to prepare.
