Best Low Carb "Pancakes"

  • 1 cup crushed pork rinds

  • 2 eggs

  • 1/4 cup cream

  • 3 packages Splenda sugar substitute

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon vanilla flavoring

  1. Crush pork rinds (I used my food processor) and set aside.

  2. Beat eggs and then fold in cream, Splenda, cinnamon, and vanilla

  3. flavoring.

  4. Add crushed pork rinds and let the mixture sit for 5 minutes.

  5. Meanwhile heat skillet with butter or oil and then fry mixture pancake style.

  6. Serve with low carb pancake syrup.

  7. Only 6 net carbs for the entire batch!

pork rinds have -0- carbs 3 pkgs of splenda 1.5 max. But look at your "no sugar syrup". I was surprised to find they have 8 grams carbs per serving!! These are the name brands we all know.. I'm looking so make my own without splenda which I suspect is the reason it is so high.. Does anyone know where I can get some with less carbs?
