Low Carb Cornbread

  • 8 ounces cream cheese

  • 3 eggs

  • 3 tablespoons granulated sugar substitute

  • 1/3 cup Atkins baking mix

  • 1/2 teaspoon baking powder

  • 1/2 cup soy grits

  • 1/4 cup buttermilk

  • 2 tablespoons bacon grease or oil

  1. beat cream cheese in mixer, adding other ingredients slowly until incorporated.

  2. allow to sit at least 5 minutes.

  3. preheat oven to 350 with a cast iron skillet inside.

  4. move skillet to stovetop and add bacon grease or oil, coating the sides and bottom.

  5. pour excess oil into your batter, mixing well.

  6. pour batter into pan and bake until golden brown. (check after 20 minutes)

Usually I buy ar a local health food store. If you ask them, they will usually order something for you that they don't carry. Also, I order from shops online.
