Provencal-Style Tomatoes

  • 3 fresh tomatoes

  • 1 tsp olive oil

  • 1 cooking spray

  • 3 medium garlic cloves

  • 1/4 cup bread crumbs

  • 2 tbsp chopped parsley

  • 1 tsp fresh thyme

  • 1 tsp sugar

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  1. Halve the tomatoes crosswise and place on an ungreased baking sheet cut side up.

  2. Spread olive oil lightly over tomatoes with brush.

  3. Place a nonstick skillet coated with cooking spray over medium heat.

  4. Mince garlic and add to hot skillet, sauté until tender.

  5. Chop the parsley and thyme.

  6. Mix the breadcrumbs, parsley, thyme, sugar, salt, and pepper in with the garlic.

  7. Spread breadcrumb mixture over the tomatoes.

  8. Broil tomatoes for 3-4 minutes. Serve hot!
