Pumpkin Mousse

  • 2 cup Pumpkin, canned, unsalted (not pumpkin pie filling)

  • 1 tbsp honey

  • 2 tsp ground cinnamon

  • 2 tsp fresh lemon peel

  • 1 cup fat free ricotta cheese

  1. Mix together the pumpkin, honey, cinnamon, and lemon peel in a bowl.

  2. Fold the mixture into the ricotta cheese.

  3. Place in the refrigerator and let chill for 1 hour. Serve.
