Russian Tea Cake Cookies

  • 1 cup margarine , softened

  • 1/4 cup confectioners sugar

  • 1 tsp vanilla extract

  • 2 cup white all purpose flour

  • 1/2 cup chopped pecans , toasted

  • 2 tbsp confectioners sugar

  1. Cream the margarine, 1/4 cup of confectioners sugar and vanilla together until light and fluffy. Mix in the flour and pecans. Chill for 2 hours.

  2. When ready to cook preheat oven to 375 degrees F. Pinch off small pieces of dough and roll into 1-inch balls. Place on an ungreased baking sheet. Bake until lightly browned, about 10-12 minutes. Cool on a wire rack.

  3. Roll in confectioners sugar before serving. Store in an airtight container.

My family has made these cookies every christmas for atleast 25 years. I love this recipe. It is very simple. Hope everyone enjoys.
