Brussels Sprouts with Prosciutto

  • 12 ounces of Brussels sprouts

  • 1 tablespoon exta-virgin olive oil

  • 2 ounces prociutto, Canadian-style bacon, or leadned cooked ham, chopped

  • 1 teaspoon finely shredded lemon peel

  • 1 Tablespoon lemon juice

  • 1/4 teaspoon kosher salt

  • 1/8 teaspoon freshly ground pepper

  1. Trim stems and remove any wilted outer leaves from Brussel sprouts. halve any large Brussel sprouts. In a covered large saucepan cook Brussel sprouts in enough boiling lightly salted water to cover for 7-9 minutes or just until tender. Drain well.

  2. Add oil to same saucepan. Heat over medium high heat. Add Brussel sprouts, prosciutto, lemon peel, lemon juice, kosher salt, and pepper. cook and stir for 1-2 minutes or until coated and heated through.

I don't like brussel sprouts at all but I think I may make this with asparagus instead. That sounds really good. Thanks for the recipe.

I know this is supposed to be a side dish, but I figure I could add some more prociutto and serve it as a main dish as well. Adding the extra prociutto shouldn't drive the carb amount up very much at all. Add a little more and this dish will even look fancy!
