Southwestern Chicken Salad

Ingredients
  • 2 cup cooked chicken breast, diced

  • 1 cup Corn, yellow, sweet, kernels, cooked, drained

  • 1 fresh tomatoes , diced (equal to 1 cup)

  • 1 cup Peas, green, sweet, frozen , thawed

  • 1/2 cup sliced green bell peppers

  • 1/2 cup red bell peppers, sliced

  • 1/3 cup low sodium canned black beans , drained

  • 1 tbsp olive oil

  • 1/4 cup fresh lime juice

  • 2 tsp ground cumin

  • 1 tbsp fresh cilantro

  • 2 tsp chili powder

  • 1 tsp oregano leaves

Directions
  1. Combine all the salad ingredients.

  2. Blend together all the dressing ingredients in a blender or food processor.

  3. Mix salad and dressing.
