Southern Chicken Breasts

Ingredients
  • 2 tsp Margarine, 80% fat

  • 16 oz boneless skinless chicken breasts , cut into 4 pieces

  • 1/2 cup diet 7 Up soda

  • 1/4 cup low sugar apricot jam

  • 2 tbsp chopped pecans

Directions
  1. Melt margarine in a large skillet, brown the chicken pieces on each side for 4 to 5 minutes.

  2. Set 1 tablespoon of the Diet 7UP aside, and pour the remaining Diet 7UP over the chicken.

  3. Lower the heat, cover, and let simmer for 15 minutes.

  4. Mix together the 1 tablespoon of Diet 7UP, spreadable fruit, and pecans. Then pour mixture over chicken pieces and continue to simmer for 1 to 2 minutes.

  5. To serve, spoon sauce over chicken breasts.

This is the kind of recipe that all cooks love to have. It is simple and quick. BUT,,,when you serve it, people are going to think it took a long time and that you put lots of effort into the meal. This one is a keeper.
