Mediterranean Pork Chops

By Debe Pendice

A little salt and pepper, a little garlic, and a bit of rosemary are all you need to turn ordinary pork chops into a Mediterranean masterpiece!

Mediterranean Pork Chops
  • 4boneless or bone-in pork loin chops, cut 1/2 " thick(1 to 1 1/2 lbs)

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 1 tablespoon finely chopped fresh rosemary or 1 teaspoon dried rosemary, crushed

  • 2 cloves garlic, minced

  1. Sprinkle chops with kosher salt and pepper; set aside. In a small bowl combine rosemary and garlic. Sprinkle rosemary mixture evenly over both sides of each chop, rub in with your fingers.

  2. Place chops on a rack in a shallow roasting pan. Roast chops in a 425 degrees oven for 10 minutes. Reduce heat to 350 degrees and continue roasting about 25 minutes or until porkchop registers 160 degree F.

Unfortunately, meat, especially pork chops don't do well when nuked. Tends to dry out the meat cause it cooks from inside out. Maybe you could use leaner ground pork and mix it with the seasoning instead of a rub?

These recipes with very low carbs to almost none are my favorites. It is so nice to be able to eat something such as these chops with out worring about the carbs especially if you want more than one.. And I'd really want more than one of these.
