Vegetable Polenta Lasagna

Vegetable Polenta Lasagna

  • 3 tablespoons vegetable oil

  • 1 onion, sliced

  • 1 sliced red bell pepper, sliced

  • 1 garlic clove, minced

  • 2 zucchini, sliced

  • 2 yellow squash, sliced

  • 1 (17 oz. tube) prepared polenta

  • 1 cups marinara sauce

  • 2 cups shredded Italian cheese blend

  • salt and pepper to taste

  1. Preheat oven to 375 degrees F.

  2. Warm 3 tablespoons vegetable oil over medium-high heat. Add onion, pepper; saute until softened, 5 minutes. Add minced garlic clove, zucchini and squash; cook, stirring, until vegetables are tender and begin to brown, 10 minutes. Season with salt and pepper.

  3. Mist an 8", square baking dish with cooking spray. Cut a 17 oz. tube of prepared polenta into 1 slices. Spread 1/2 cup jarred marinara sauce in bottom of dish. Top with 9 slices of polenta, then half of vegetable mixture. Sprinkle 1 cup shredded Italian blend cheese blend over vegetables. Repeat layering, beginning with sauce, followed by polenta, then vegetables, and then cheese.

  4. Bake until heated through, cheese is melted, and sauce is bubbly, about 35 minutes. Let rest for 10 minutes before serving. Serve hot.

This is just another high carb recipe using cooked corn meal (polenta) and the carb count is really 17 carbs and not 12. Corn meal is a high starch grain even when it has an Italian name. Makes no difference — starch turns to blood sugar even in Italy after it's cooked and sent to American in 17 ounce tubes.

I made this last night and it was scrumptious. I did add some nutmeat to it and that gave it a little more texture. I loved it.

This is one of the reasons that I love reading the recipes here on the site. I would never have imagined that this would be so low in carbs with all the wonderful ingredients it has in it. I am really planning on fixing this as soon as possible.
