kickoff Shrimp Kebabs

Ingredients
  • 1 Tablespoon each olive oil and fresh lime juice

  • 1 Tablespoon ground chili powder

  • 1 teaspoon salt

  • 1/2 teaspoon ground cayenne pepper

  • 1 red and/or yellow pepper, seeded and cut into 1" pieces

  • 1 red onion, peeled and cut into wedges

  • 1 shrimp, peeled and deveined

  • 2 Tablespoon chopped fresh cilanto

Directions
  1. Heat grill pan. In a bowl combine first 6 ingredients. Add peppers, onions and shrimp; toss to coat. Alternately tread shrimp and vegetables onto 4" skewers. Grill 4 minutes, or until shrimp are pink, turning once. Sprinkle with cilantro.

If I ever fix these, I will probably eat them all and not share. I am serious. I'd never put this out for a crowd, then there would not be enough left for me.
