Salsa Vinaigrette

Ingredients
  • 1 cup of roasted tomato salsa (or your favorite salsa)

  • 1/ cup cider vinegar

  • 3 tablespoons extra-virgin olive oil

  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Combine the salsa, vinegar, oil, and pepper in a blender or food processor and blend or process until smooth. There will be about 1 cup vinaigrette.

  2. Yields 1 cup: 16 (1-tablespoon) servings

This is such a simple and quick idea! Goes to show that I am not that creative because I never thought of it. As a salad dressing this is going to taste so good. Just add some cheese, ground beef, and lettuce to a dish and you have an instant taco salad. Add a few lite baked chips and You have an excellent dinner.
