Versatile Tomato Saute

  • 2 1/2 cup fresh cherry tomatoes , or red grape tomatoes

  • 1 cooking spray

  • 1/4 cup shallots, chopped (2 medium)

  • 1 tsp fresh thyme , or lemon thyme

  • 1 medium garlic cloves , minced

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 4 oz Cheese, mozzarella, fresh, balls, cherry, serving , cut into 1/2-inch cubes

  1. To prepare, halve 1 1/2 cups of the tomatoes and set aside. Lightly coat a large nonstick skillet with cooking spray. Cook and stir shallots, thyme, and garlic in hot skillet over medium heat for 2 to 3 minutes or until shallots are tender.

  2. Add all the tomatoes, salt and pepper. Cook and stir for 1 to 2 minutes or until tomatoes are warmed. Remove from heat. Stir in mozzarella cheese. Enjoy!
