Camelized French Onion Dip

Ingredients
  • 1 Tablespoon olive oil

  • 2 1/4 cups silvered yellow onions

  • 1/2 teaspoon salt

  • 4 ounzes low-fat cream cheese

  • 1/2 cup nonfat Greek style yogurt

  • 4 ounzes low-fat sour cream

  • Freshly ground black pepper

Directions
  1. Heat the olive oil in a large skillet over medium heat. Add onions and salt. saute 35-40 minutes until golden brown, stirring occasionally. Set aside to cool.

  2. Place cooled onions in food processor. Pulse several times to chop. Remove 1/2 of the onions and place them in a mixing bowl. Add the remaining ingredients to the food processor. Process until smooth. Spoon into mixing bowl and combine with chopped onions.

  3. Serves 10

This is one of my favorite kinds of dip. It seems to be so easy to make. The fact that it has so few carbs make it a real keeper. I can't wait to try it with some raw veggies.
