English Muffin Bread

  • 1 cooking spray

  • 1 tsp yellow cornmeal

  • 2 1/2 cup white all purpose flour , divided

  • 1/2 cup quick cooking rolled oats

  • 1 package baker's yeast

  • 1 tsp salt

  • 1 1/4 cup fat free milk

  • 1 tbsp honey

  • 1/4 tsp baking soda

  1. Coat an 8 x 4 x 2 inch loaf pan with cooking spray and dust with cornmeal.

  2. Mix 1 1/2 cups flour, oats, yeast, and salt. Combine milk and honey in a pot and heat until warm; mix in baking soda.

  3. Combine milk mixture with flour mixture and stir until smooth. Add in enough of the extra flour to form a thick batter. Spoon batter into the prepared pan and let rise, covered, in a warm place 45 to 60 minutes.

  4. Bake at 400 degrees F for 25 to 30 minutes. Take out of pan and let cool.

This is really a very healthy recipe. Imagine adding the oats to the other ingredients! It is so heart healthy. This is one to try sooner than later.
