Egg and Mushroom Breakfast Sandwich

  • 1 butter flavored cooking spray

  • 1 medium onions , sliced thin

  • 1/4 lb fresh mushrooms , sliced thin (shitake)

  • 1 tbsp fresh ginger root , minced

  • 2 tbsp fat free reduced sodium chicken broth

  • 1 pinch salt (optional)

  • 1 pinch black pepper

  • 2 eggs

  • 1 English Muffin, plain, enriched

  1. Spray a skillet with cooking spray. Cook the onion over low heat for approximately 4 minutes, stir frequently. Add the mushrooms, ginger, and broth and cook, covered, for about 5 minutes. Sprinkle with salt and pepper.

  2. Poach the eggs and toast the English muffins.

  3. Top each muffin evenly with half of the mushroom mixture. Place the eggs on top of the mushroom mixture

An easy great breakfast idea. It will even be good to wrap up and take in the car to enjoy on the way to work.
