Easy Marinated Chicken

  • 2 tbsp olive oil

  • 1/3 cup cooking sherry

  • 1 tbsp fresh lemon juice

  • 1/3 cup fresh chopped onion , finely

  • 1/2 tsp minced garlic

  • 1 tsp dried rosemary

  • 1 pinch black pepper

  • 6 boneless skinless chicken breasts

  1. In a small bowl, whisk together the olive oil, sherry, lemon juice, onion, garlic, rosemary, and pepper.

  2. Place the chicken in a shallow glass dish, and pour the marinade over it, and cover.

  3. Refrigerate 2 hours to overnight.

  4. Broil or grill the chicken until it is done, 5 to 7 minutes on each side, basting with the marinade. Serve hot.

I can see where this would be great with other meats as well. I am going to try it with some lamb. I love resemary with lamb.
