Roasted Mixed Nuts
Ingredients
  • 1 C. mixed unsalted pecans, walnuts and macadamia nuts

  • 1 1/2 Tbsp. apple cider, grape juice or other fruit juice

  • 1/2 tsp. celery salt or curry powder

Directions
  1. Preheat the oven to 350*F. In a small bowl, combine the nuts, cider or juice and celery salt and/or curry powder. Toss to coat, and spread in a single layer on a baking sheet. Roast until light golden, 4 to 6 minutes. Let cool before serving. These will keep at room temperature, uncovered for several days. Makes 4 servings

It is sure a good thing to remind us how wonderfully low in carbs a snack of these nuts can be. Not to mention how great they taste. Do I really have to let them cool before I eat them? lol
