Delicious Stir-Fry Tomatoes

Ingredients
  • 1 tbsp vegetable oil

  • 1 cup fresh chopped celery , thinly

  • 1 cup sliced green bell peppers , julienne

  • 1 medium zucchini , cut in 1/4 inch slices (6 to 8 inch)

  • 4 fresh tomatoes , cut into wedges

  • 1 cup fat free reduced sodium chicken broth

  • 1 tbsp cornstarch

  • 1/4 tsp salt

  • 1/2 tsp ground ginger

  • 1 tsp black pepper

Directions
  1. Pour oil into a heavy saucepan and bring to a temperature suitable for frying. Add in celery, peppers, and zucchini to the pan, cooking over moderate heat for about five minutes or until crispy. Add tomato wedges. Stirring constantly, cook until tomatoes are hot.

  2. In a separate bowl, stir together broth, cornstarch, and seasonings until smooth. Add to vegetables and stir, cooking until thickened (about two minutes). Serve hot.

Thank you so much. And I am glad you like the recipes. It gets overwhelming for my to post all the recipes at once. So I have definately slowed down. And I love reading everyones responces to them. Now I can keep up. So glad you have a picture of yourself now. I am assuming this is you. I always love putting a face with a name.

I sure am glad that you are back to posting some recipes each day. I'm glad that you are not posting so many every day this time around. That way, lol, I get to read and copy them all. AND, I get to try the ones I like quicker. I usually try the ones with the lowest carbs because even eating a little more than I am supposed to drives my count wild. This is one that not only will look good to serve, but all the different flavors will be so yummy!
