Sparkeling Broccoli

Ingredients
  • 1 Fresh Broccoli Head

  • 2t Olive Oil

  • 1/2 C Diced Onion

  • 1/4 C Sun Dried Tomatoes (Jullian cut, if not tender, rehydrate)

  • 1/2 C Low Sodium Chicken Broth

  • 1 Fresh Lemon

  • 1/4 C Pine Nuts (toasted)

Directions
  1. Prepare your broccoli by cutting it into spears or florets as you like. Set aside.

  2. In a large skillet, saute onion in olive oil on medium heat until tender. Add chicken broth and tomatoes and saute for about 2 minutes more. Add juice from lemon and and stir. Layer your broccoli over your sauted mixture and cover with a tight lid and steam to the desired tenderness.

  3. Toss to cover your broccoli and place in serving bowl. Garnish with toasted pine nuts and serve immediately.

  4. This sparkeling flavor will wake up that ordinary side dish into something you will want to serve again and again. If you want a diffrent flavor for your pasta, try this on top. Oh it is sooo good.
