1 Fresh Broccoli Head
2t Olive Oil
1/2 C Diced Onion
1/4 C Sun Dried Tomatoes (Jullian cut, if not tender, rehydrate)
1/2 C Low Sodium Chicken Broth
1 Fresh Lemon
1/4 C Pine Nuts (toasted)
Prepare your broccoli by cutting it into spears or florets as you like. Set aside.
In a large skillet, saute onion in olive oil on medium heat until tender. Add chicken broth and tomatoes and saute for about 2 minutes more. Add juice from lemon and and stir. Layer your broccoli over your sauted mixture and cover with a tight lid and steam to the desired tenderness.
Toss to cover your broccoli and place in serving bowl. Garnish with toasted pine nuts and serve immediately.
