Company Chicken

  • 8 boneless skinless chicken breasts (or thighs)

  • 1 pinch salt and pepper (to taste)

  • 1 cooking spray

  • 2 tbsp olive oil

  • 6 fresh green onions , chopped

  • 1/2 tsp minced garlic

  • 1/2 lb fresh medium mushrooms , sliced

  • 1/2 cup white wine

  • 28 oz Tomatoes, diced, with juice, canned

  • 1/2 cup fat free reduced sodium chicken broth

  1. Season the chicken breasts with the salt and pepper. In a large skillet coated with nonstick cooking spray, heat the olive oil, brown the chicken, remove from the pan, and set aside.

  2. Add the green onions, garlic, and mushrooms to the pan, and sauté until tender. Add the white wine, tomatoes, and broth, and bring to a boil, and adjust the seasonings.

  3. Reduce to a simmer, and add the chicken, cover, and continue to cook for about 30 to 40 minutes, or until the chicken is tender, and serve.

I am so happy getting all these new chicken recipes. I am trying to do a healthy new eating regimen and this fits in it. I do love mushrooms too!..

This sounds really yummy! It has lots of different flavors that will combine to make it taste really special. Adding the tomatos and green onions will even make it look pretty.
