Chocolately Chip Cookies

  • 1 cup margarine ( 2 sticks)

  • 1/4 cup sugar

  • 3/4 cup brown sugar substitute, granulated (such as Sugar Twin brown sugar replacement)

  • 3 egg whites , bring to room temperature

  • 1 tbsp vanilla extract

  • 2 cup white all purpose flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup water , room temperature

  • 6 oz semi sweet chocolate chips , mini chips (equal to 1/2 bag)

  • 1 cooking spray

  1. Preheat the oven to 375 degrees F.

  2. Mix margarine, sugar, and sugar substitute at medium speed until light and fluffy. Add vanilla and egg whites and mix at medium speed until light and fluffy.

  3. Gradually mix in combined baking soda, flour, and salt. Add 1/4 cup of water and mix until smooth.

  4. Add chocolate chips and mix lightly.

  5. By 1 tablespoonful drop the dough onto the cookie sheet after they have been sprayed with cooking oil.

  6. Press down on the dough with your fingers to form a circle about 2 inches across.

  7. Bake for about 12 minutes.

  8. Remove cookies from the hot cookie sheet and let cool to room temperature on a wire rack.
