Bacon-Cheddar Mushrooms

These delicious mushrooms make a great snack, appetizer or addition to any meal.

Bacon-Cheddar Mushrooms
  • 3 pieces bacon, cooked

  • 3/4 cup crimini mushrooms

  • 1 tablespoon salted butter

  • 1 tablespoon onion, chopped

  • 3/4 cup shredded cheddar cheese

  1. Preheat oven to 400 degrees F. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, dice and set aside.

  2. Remove mushroom stems. Set aside caps. Chop stems into fine dice.

  3. In a large saucepan over medium heat, melt the butter. Slowly cook the diced stems and diced onion, stirring occasionally until the onion is soft. Remove from heat.

  4. In a medium bowl, stir together the mushroom stem mixture, diced bacon and 1/2 cup shredded cheddar cheese. Mix well and scoop the mixture into the mushroom caps. Add remaining shredded cheddar to top of each cap.

  5. Bake in the preheated oven 15 minutes, or until the cheese has melted.

Are you sure these are crimini? They look larger than criminis. Criminis are baby protabella, these look like the larger portabella caps.
