1 1/2 cups chopped Broccoli
1 1/2 Fresh corn Kernels (appx. 3 ears)
1 cup shredded skim Mozzarella cheese
1 cup part-skim Ricotta cheese
4 Scallions thinly sliced
1/4 cup FRESH basil
1 teaspoon Garlic powder
1/4 tsp ground black pepper (fresh)
1/4 tsp salt
flour for dusting
20oz whole wheat pizza dough (available from your grocer)
4 tsp extra virgin olive oil
preheat oven to 475 degrees
Coat 2 baking sheets with cooking spray
Combine broccoli, corn, mozzarella, ricotta, scallions, basil, garlic powder, salt and pepper in a large mixing bowl.
on floured counter top divide whole wheat pizza dough into 6 equal pieces.
Roll each piece into a ball and press into a 8" circle.
Place 3/4 cup of cheese filling onto 1/2 of the dough leaving a one inch border on the outside. Brush the border with water and fold the top half over the filling. fold the edges over once onto themselves and crimp with a fork to seal. Repeat until all 6 calzones are built. Brush the tops of each calzone liberally with the olive oil.
make 3 small slits on the top of each calzone to vent the steam as they cook.
Bake the calzones in the oven until golden brown on top (about 15 min)
