Vegi Calzones

  • 1 1/2 cups chopped Broccoli

  • 1 1/2 Fresh corn Kernels (appx. 3 ears)

  • 1 cup shredded skim Mozzarella cheese

  • 1 cup part-skim Ricotta cheese

  • 4 Scallions thinly sliced

  • 1/4 cup FRESH basil

  • 1 teaspoon Garlic powder

  • 1/4 tsp ground black pepper (fresh)

  • 1/4 tsp salt

  • flour for dusting

  • 20oz whole wheat pizza dough (available from your grocer)

  • 4 tsp extra virgin olive oil

  1. preheat oven to 475 degrees

  2. Coat 2 baking sheets with cooking spray

  3. Combine broccoli, corn, mozzarella, ricotta, scallions, basil, garlic powder, salt and pepper in a large mixing bowl.

  4. on floured counter top divide whole wheat pizza dough into 6 equal pieces.

  5. Roll each piece into a ball and press into a 8" circle.

  6. Place 3/4 cup of cheese filling onto 1/2 of the dough leaving a one inch border on the outside. Brush the border with water and fold the top half over the filling. fold the edges over once onto themselves and crimp with a fork to seal. Repeat until all 6 calzones are built. Brush the tops of each calzone liberally with the olive oil.

  7. make 3 small slits on the top of each calzone to vent the steam as they cook.

  8. Bake the calzones in the oven until golden brown on top (about 15 min)
