Halibut Provencale

Ingredients
  • Nonstick cooking spray

  • 1 can (28ounces) reduced-sodiulm diced tomatoes

  • 2 cups fennel, stems and fronds removed , sliced and chopped

  • 1 cup finely chopped onion

  • 2 tablespoons minced orange zest

  • 2 teaspoons dried herbes de Provence

  • 4 halibut steaks(4 ounces each)

  • 1 tablespoon olive oil

  • Minced basil (optional)

  • TOPPING

  • 1/4 tspn salt

  • 1/2 tspn pepper

  • 1 tspn paprika

  • 2 cloves garlic, minced

  • 1/4 cup dry bread crumbs

  • 1 tablespoon Parmesan cheese, grated

Directions
  1. Place an ovenproof 12-inch skillet ver medium heat and coat with cooking spray. Add tomatoes, fennel, onion, orange zest and herbes de Provence. Cook for 10 minutes, stirring often.

  2. Place halibut over vegetables; sprinkle with oil. Mix salt, pepper, paprika, garlic, breadcrumbs and cheese together. Sprinkle over fish. Cover skillet and cook until fish flakes easily.

  3. Alternatively, heat broiler. Place skillet under broiler until breadcrumbs are golden brown, 1 - 2 minutes. Sprinkle fish with minced basil , if using.
