Southern Border Meatloaf


  • 1 pound extra lean ground beef; ground turkey is a great substite or combination to cut down nutritition

  • 1/2 cup finely chopped yellow onion

  • 1/4 cup chopped cilantro leaves

  • 1 can(4 ounces)chopped mild green chillies

  • 2 egg whites

  • 1/2 cup cornmeal

  • 1 1/2 teaspoons ground cumin

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground pepper

  • 1 can(8 ounces)tomato sauce, divided

  • 2 tablespoons ketchup

  • Cooking Spray

  1. Preheat oven 350degrees f. Combine beef, onion, cilantro, chillies, egg whites, cornmeal, cumin, salt, pepper and half of the tomato sauce in mixing bowl; mix well. Combine remaining tomato sauce and ketchup in a small bowl.

  2. Place meat mixture on a rimmed baking sheet coated with cooking spray and shape into an oval about 6x9 inches.

  3. Top with tomato sauce mixture, Bake 55 minutes.

  4. Let stand 5 minutes before slicing,

Meatloaf is something I will never stop eating. This recipe sounds easy and has lots of flavors in it to tickle the old taste buds. The cumin is really going to make this recipe a cut above.
