Veggie Burger Mix (Vegan)

Ingredients
  • 2/3 cup of veggie crumbles (Morningstar meal starters)

  • 4 cups chopped fresh spinach

  • 1/2 medium white or yellow onion chopped

  • 3/4 cup of sliced fresh mushroom

  • 1 tsp. olive oil for sauteeing (optional)

Directions
  1. Coat skillet with cooking spray or use the 1 tsp. of Olive oil; add onion and mushroom and sautee to desired tenderness, add veggie burger crumbles.

  2. Add spinach last and stir about 1 minute and then serve. use salt and pepper as desired.

I've always wanted to try a Veggie burger and so far I never have. Now that you have posted the recipe, I am going to fix some. They sound wonderful and anything that has fresh spinach in it gets my vote.
