2/3 cup of veggie crumbles (Morningstar meal starters)
4 cups chopped fresh spinach
1/2 medium white or yellow onion chopped
3/4 cup of sliced fresh mushroom
1 tsp. olive oil for sauteeing (optional)
Coat skillet with cooking spray or use the 1 tsp. of Olive oil; add onion and mushroom and sautee to desired tenderness, add veggie burger crumbles.
Add spinach last and stir about 1 minute and then serve. use salt and pepper as desired.
