crisp cornmeal wafflles

Ingredients
  • 1cup flour,1cup cornmeal, 1tsp. salt, 1tsp. baking powder, 1/2tsp. baking soda, 11/2cups buttermilk, 1/2cup milk, 2 large eggs,yolks seperated, 1 Tb. sugar,1/2 cornstarch

Directions
  1. heat oven to 200 degrees. mix flour cornmeal cornstarch salt baking powder baking soda in medium bowl. measure buttermilk milk and oil in large pyrex measuring cup;whisk in egg yolks and set aside.place egg whitesin mixing bowl. with a mixer,beat egg whites to soft peaks. sprinkle in sugar and beat until whites are firm and glossy.pourbuttermilk mixture into flour mixture and whisk until combined. add egg whites to batter in dollops and gently fold in with a spatula until the whites are just incorporated. add batter to a hot waffle iron 1/2 to 1/3cup and cook until golden brown.
