3 snacks per serving size
4 ounces light cream cheese
1 can(6ounces) water-packed chunk light tuna, well drained
1 tablespoon chopped fresh parsley
1 tablespoon minced onion
1/2 teaspoon oregano
1/2 teaspoon pepper
18 (1/2-inch) thick slices seedless cucumber
18 capers for garnish (optional)
Preheat oven to 500 degrees f.
Combine cream cheese, tuna, parsley, onion, oregano, and pepper in a medium bowl. Mix well.
Mound about 1 tablespoon of the tuna mixture to completely cover top of each cucumber slice. using the inside edge of a teaspoon to shape mixture. If serving cold, garnish each with a caper, if desired.
To serve hot; Spray baking sheet with cooking spray. Place canapes on sheet and bake at 500 degrees until tops are puffed and brown, about 10 minutes
Tip::: Capers are the flower buds of a bush native to the Mediterranean and parts of India. The buds are picked, sun=dried, then pickled. Capers should be rinsed before using to remove excess salt.
